Recipe: baked beans on toast

It is getting colder here in the Netherlands and I recently saw the first snow of this winter. That's why I wanted to share one of my favorite, warm breakfast recipes: baked beans on toast. It is basically a twist to the simple Hong Kong homemade dish, tomato & fried eggs. I didn't have any tomatoes at home at the time I made it, but some cherry tomatoes would have been a great addition.

What you need for the baked beans on toast


- a can or a jar of haricot beans in tomato sauce. 

I really like the Simply M&S baked beans in a rich tomato sauce. The beans have a nice bite to them and the tomato sauce is nicely flavored. Most of the haricot beans in tomato sauce that I can find in the local supermarket either have too soft and mushy beans in it or a too sour tomato sauce. That's why I seriously miss the Marks & Spencer stores, since their departure from the Netherlands at the end of October.

- a thick kind of toast

I prefer using the Bolletje Volkoren Knäckebröd, available in most supermarkets in the Netherlands. It is sturdy enough to hold the moist beans, but still not so rock hard that you hurt your teeth eating it. The flavor is quite good too.

 - two eggs

- sugar, salt, and pepper for seasoning

 - one clove of garlic (chopped in tiny pieces)

 - a teaspoon of oil


 How to make the baked beans on toast


- First, put the teaspoon of oil in a frying pan. When it gets hot, you can add the garlic.
- Beat two eggs in a bowl and pour it in the frying pan to make scrambled eggs.
- While the eggs are still glossy and moist, add the baked beans in tomato sauce. Let it simmer for a bit (don't let it boil!).
- After a few minutes, you can add some sugar, salt, and pepper to your taste.
- Put it in a large bowl and add some thick toasts on the side.

Note: It serves 2-3 people, so if you are on your own, you can put the leftovers in a sealable container and have it for lunch over rice or have it as a side dish during dinner. Just reheat it in the microwave. The flavors stay good for quite some time.
